Preparation Steps
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add 1 pound of ground turkey, seasoning with salt, pepper, paprika, and dried thyme. Cook for 5-7 minutes until no longer pink.
  3. Add 1 diced onion and 1 diced bell pepper to the skillet. Sauté for about 5 minutes until the vegetables soften.
  4. Stir in 2 cups of fresh spinach or kale and continue cooking until wilted, about 2-3 minutes.
  5. In a large mixing bowl, combine the turkey-vegetable mixture with 2-3 cups of cubed sweet potatoes. Toss until well combined.
  6. Transfer the mixture into a greased baking dish, smoothing the top for an even bake.
  7. Top with shredded cheddar and mozzarella cheese. Bake for 25-30 minutes until the cheese is bubbly and golden brown.
