Ingredients
  

For the Beef Mixture
  • 1 pound Lean Ground Beef substitute with ground turkey or chicken for a lighter twist
  • 1 medium Yellow Onion or shallots for milder taste
  • 1 packet Taco Seasoning consider making your own mix
For the Sweet Potatoes
  • 2 large Sweet Potatoes butternut squash can be substituted
  • 2 tablespoons Olive Oil avocado oil is a good substitute
For the Seasoning
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic Powder
  • 1/2 teaspoon Cinnamon
  • to taste Salt
  • to taste Pepper
For Toppings
  • 1 medium Avocado sliced
  • 1 cup Cottage Cheese or substitute with Greek yogurt
  • 1/4 cup Hot Honey or regular honey with chili flakes

Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, add diced sweet potatoes along with a drizzle of olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Toss until evenly coated and spread on a baking sheet. Roast for 40-45 minutes, stirring halfway through.
  3. Heat remaining olive oil in a skillet over medium heat. Add diced yellow onion and sauté for 5-7 minutes until soft and translucent.
  4. Add the lean ground beef to the skillet with the onions. Sprinkle in taco seasoning and cook for 8-10 minutes until fully cooked and no longer pink.
  5. Assemble your bowls starting with roasted sweet potatoes, then add the savory ground beef mixture, sliced avocado, and a portion of cottage cheese.
  6. Drizzle hot honey over the bowls before serving.
