  • 1 teaspoon Garlic Powder

For the Topping
  • 1 cup Feta Cheese or goat cheese as an alternative
  • 2 tablespoons Fresh Lemon Juice
  • 1 tablespoon Lemon Zest
  • ¼ cup Chopped Fresh Parsley or fresh dill/thyme

Method
 

Cooking Instructions
  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine washed and halved baby potatoes with olive oil, dried oregano, garlic powder, salt, and pepper. Toss until evenly coated.
  3. Spread the seasoned potatoes in a single layer on a baking sheet with cut sides facing down.
  4. Roast the potatoes for 30-35 minutes, turning halfway for even browning.
  5. Sprinkle crumbled feta cheese over the potatoes during the last 5-8 minutes of roasting.
  6. Drizzle freshly squeezed lemon juice and zest over the potatoes after removing from the oven. Toss gently.
  7. Garnish with chopped fresh parsley and serve warm.
