Preparation Steps
  1. In a medium bowl, whisk together soy sauce, honey, olive oil, rice vinegar, fresh grated ginger, minced garlic, black pepper, paprika, and salt until smooth and well combined.
  2. Take the bone-in chicken thighs and coat them generously in the marinade, covering the bowl with plastic wrap. Allow the chicken to marinate in the refrigerator for at least 30 minutes, ideally overnight.
  3. Preheat your oven to 200°C (400°F).
  4. Once marinated, arrange the chicken thighs skin-side up in a greased or parchment-lined baking dish. Pour any remaining marinade over the chicken.
  5. Bake the chicken thighs for approximately 40-45 minutes until the skin is golden and the internal temperature reaches 75°C (165°F). For extra crispiness, broil for an additional 2-3 minutes.
  6. Remove from the oven and let it rest for a few minutes before serving. Garnish with sliced green onions and sesame seeds.
