Preparation Steps
- In a medium bowl, whisk together soy sauce, honey, olive oil, rice vinegar, fresh grated ginger, minced garlic, black pepper, paprika, and salt until smooth and well combined.
- Take the bone-in chicken thighs and coat them generously in the marinade, covering the bowl with plastic wrap. Allow the chicken to marinate in the refrigerator for at least 30 minutes, ideally overnight.
- Preheat your oven to 200°C (400°F).
- Once marinated, arrange the chicken thighs skin-side up in a greased or parchment-lined baking dish. Pour any remaining marinade over the chicken.
- Bake the chicken thighs for approximately 40-45 minutes until the skin is golden and the internal temperature reaches 75°C (165°F). For extra crispiness, broil for an additional 2-3 minutes.
- Remove from the oven and let it rest for a few minutes before serving. Garnish with sliced green onions and sesame seeds.
