  • 1 lb Ground Chicken Ground turkey can also be used.
  • 1 cup Gluten-free Breadcrumbs Substitute for traditional breadcrumbs.
  • 1/2 cup Grated Parmesan Cheese Freshly grated is best.
  • 3 cloves Minced Garlic Using fresh garlic will give the best results.
  • 1 large Egg A flax egg can be a great vegan substitution.
  • 1/2 cup Chopped Onion Red or yellow onions work beautifully.
  • 1 tsp Dried Oregano
  • 1 tsp Dried Basil
  • to taste Salt
  • to taste Pepper
Optional Garnish
  • to taste Fresh Parsley or Additional Parmesan Sprinkle on top before serving.

Method
 

Cooking Instructions
  1. Preheat your oven to 375°F (190°C) and prepare a baking sheet by greasing it lightly or lining it with parchment paper.
  2. In a large mixing bowl, combine the ground chicken, gluten-free breadcrumbs, freshly grated parmesan, minced garlic, beaten egg, chopped onion, dried oregano, dried basil, salt, and pepper. Mix gently until just combined.
  3. Divide the mixture into four equal portions and shape each into oval loaves, about 6 inches long, placing them on the prepared baking sheet.
  4. Bake for 20 to 25 minutes, or until the internal temperature reaches 165°F (74°C) and the loaves are browned.
  5. After baking, let the meatloaves rest for at least 5 minutes before serving. Optionally, garnish with parsley or additional parmesan.
