Ingredients

For the Quesadilla
  • 4 large Eggs Use fresh eggs for the best texture and flavor.
  • 1 cup Cheese Cheddar or Monterey Jack works beautifully; consider dairy-free cheese for a substitute.
  • 2 large Tortillas Flour for a classic touch or corn for a gluten-free option.
  • 2 tablespoons Butter Enhances flavor and browning; swap with oil if desired.
For Extra Flavor
  • 1 cup Tomatoes Chopped tomatoes for a burst of freshness.
  • 1 cup Bacon Crumble bacon to elevate the savory flavor.

Equipment

  • Non-stick skillet
  • mixing bowl
  • spatula
  • sharp knife or pizza cutter

Method

Step-by-Step Instructions
  1. Pre-Cook the Eggs: Crack the eggs into a mixing bowl, whisk until combined. Heat a skillet over medium-low and add butter. Pour in eggs and gently scramble for about 3-4 minutes until soft and slightly runny.
  2. Heat the Skillet: Reduce heat to low and add another pat of butter. Once melted and bubbling, it’s ready for the tortilla.
  3. Assemble the Quesadilla: Place one tortilla in the skillet, then add cheese over the tortilla, scrambled eggs, and another layer of cheese. Top with a second tortilla and press down.
  4. Cook the First Side: Cook on low heat for about 3-5 minutes until the bottom is golden brown and the cheese starts to melt.
  5. Flip and Finish Cooking: Carefully flip the quesadilla and cook for another 3-5 minutes until golden and the cheese is melted.
  6. Slice and Serve: Remove from skillet, let cool, then slice into wedges. Serve hot with salsa or sour cream if desired.
