Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease your muffin tin with non-stick spray.
  2. Combine eggs, cottage cheese, cheddar, garlic powder, onion powder, salt, and black pepper in a blender or mixing bowl and blend until smooth.
  3. Gently fold in chopped spinach and diced red bell pepper into the egg mixture.
  4. Pour the egg mixture into the prepared muffin tin, filling each cup about ¾ full.
  5. Bake for 25–30 minutes until golden and a toothpick comes out clean.
  6. Cool for about 5 minutes, then remove from the tin and serve warm or store in an airtight container.
