- Preheat your oven to 350°F (175°C) and grease your muffin tin with non-stick spray.
- Combine eggs, cottage cheese, cheddar, garlic powder, onion powder, salt, and black pepper in a blender or mixing bowl and blend until smooth.
- Gently fold in chopped spinach and diced red bell pepper into the egg mixture.
- Pour the egg mixture into the prepared muffin tin, filling each cup about ¾ full.
- Bake for 25–30 minutes until golden and a toothpick comes out clean.
