  • 1 cup Shredded Mexican Cheese Blend non-dairy cheese can be used
  • 1/4 cup Chopped Cilantro
  • 1/2 cup Sour Cream Greek yogurt is a good substitute

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Sauté chopped red onion and red bell pepper for about 5 minutes.
  3. Stir in ground cumin, chili powder, kosher salt, black pepper, and minced garlic. Cook for about 1 minute.
  4. Add diced tomatoes, black beans, frozen corn, shredded chicken, and salsa to the skillet. Heat through for 3-4 minutes.
  5. In a 9x13 inch baking dish, spread half of the crushed tortilla chips.
  6. Pour the chicken mixture over the first layer of tortilla chips and spread evenly. Top with remaining crushed tortilla chips.
  7. Sprinkle the shredded Mexican cheese blend over the chips.
  8. Bake for 20-25 minutes until the cheese is melted and bubbly.
  9. Garnish with chopped cilantro and sour cream before serving.
