Step-by-Step Instructions
  1. In a large bowl, mix together olive oil, cumin, paprika, turmeric, coriander, cinnamon, minced garlic, lemon juice, salt, and pepper. Add the chicken thighs, ensuring they are fully coated in the marinade. Cover the bowl and refrigerate for at least 30 minutes.
  2. Preheat your grill or a non-stick pan over medium-high heat. Add a few drops of olive oil to prevent sticking and ensure a lovely sear.
  3. Once hot, lay the marinated chicken thighs down carefully. Cook for about 5-7 minutes on each side, until golden crust appears and internal temperature reaches 165°F (75°C).
  4. Prepare the garlic sauce by whisking mayo, minced garlic, lemon juice, and a pinch of salt until smooth. Adjust garlic to your liking.
  5. After letting the chicken rest, slice into bite-sized pieces and serve in warm pita bread topped with garlic sauce or with fresh vegetables.
