- In a large mixing bowl, combine olive oil, cumin, paprika, turmeric, coriander, cinnamon, minced garlic, lemon juice, salt, and pepper.
- Add chicken thighs or breasts, making sure they are well-coated. Cover and marinate in the refrigerator for at least 30 minutes, ideally overnight.
- Preheat your grill or non-stick pan over medium-high heat.
- Add a few drops of olive oil to the grill to prevent sticking.
- Cook the chicken for about 5-7 minutes on each side until golden-brown and reach an internal temperature of 165°F (75°C).
- While the chicken rests, whisk together mayo, extra garlic, and a splash of lemon juice in a small bowl. Season with salt.
- Slice the rested chicken and serve it warm on pita bread or a plate with garlic sauce.
