  • 2 tbsp Lemon juice Fresh-squeezed is best
  • 1 tsp Salt Season to taste
  • 1 tsp Pepper Season to taste
For the Garlic Sauce
  • 1 cup Mayo Can use Greek yogurt for a lighter variation
  • 2 cloves Extra minced garlic Adjust according to your taste
  • 1 tbsp Additional lemon juice Adjust for tanginess

Method
 

Preparation
  1. In a large mixing bowl, combine olive oil, cumin, paprika, turmeric, coriander, cinnamon, minced garlic, lemon juice, salt, and pepper.
  2. Add chicken thighs or breasts, making sure they are well-coated. Cover and marinate in the refrigerator for at least 30 minutes, ideally overnight.
  3. Preheat your grill or non-stick pan over medium-high heat.
  4. Add a few drops of olive oil to the grill to prevent sticking.
  5. Cook the chicken for about 5-7 minutes on each side until golden-brown and reach an internal temperature of 165°F (75°C).
  6. While the chicken rests, whisk together mayo, extra garlic, and a splash of lemon juice in a small bowl. Season with salt.
  7. Slice the rested chicken and serve it warm on pita bread or a plate with garlic sauce.
