Step-by-Step Instructions
  1. Season boneless chicken breasts with salt, pepper, and half of the Italian herbs. Let sit for 10 minutes.
  2. Heat a skillet over medium-high heat with olive oil. Sear the chicken for 4-5 minutes on each side until cooked through. Remove and set aside.
  3. Lower the heat, add more olive oil if necessary, and sauté chopped onion for 3-4 minutes. Add minced garlic and cook for 30 seconds.
  4. Incorporate halved cherry tomatoes, cooking for 4-5 minutes until they soften.
  5. Pour in crushed tomatoes, remaining Italian herbs, red pepper flakes, and chicken broth. Simmer and adjust seasoning.
  6. Return the seared chicken to the skillet, cover, and simmer for 12-15 minutes on low heat.
  7. Check doneness, garnish with basil and Parmesan, and serve hot over pasta or with bread.
