Cooking Instructions
  1. Begin by cutting boneless, skinless chicken breasts into bite-sized pieces and coat with spices.
  2. Heat a large skillet over medium-high heat and add olive oil until shimmering.
  3. Sauté seasoned chicken pieces for 5-7 minutes until cooked through and golden brown.
  4. Add sliced bell peppers and sauté for 5 minutes until softened.
  5. Stir in corn and diced tomatoes, cooking for an additional 3-5 minutes.
  6. Reduce heat to low, sprinkle shredded cheddar cheese, cover to melt for 2-3 minutes.
  7. Garnish with fresh cilantro and serve topped with a dollop of sour cream if desired.
