- In a large skillet, heat 2 tablespoons of olive oil and 1 tablespoon of butter over medium heat. Add 2 finely sliced yellow onions and a pinch of salt. Cook slowly for 25-30 minutes, stirring occasionally until golden brown.
- To deepen the flavor, stir the onions every 5-7 minutes and if desired, sprinkle 1 teaspoon of sugar to speed up caramelization.
- In a small saucepan, heat 1/4 cup of olive oil over low heat, adding 3 minced garlic cloves. Sauté until fragrant, about 2 minutes.
- Carefully stir in 1 teaspoon of chili flakes and 1/2 teaspoon of smoked paprika and allow to infuse.

- Drizzle the chilli oil over pasta and adjust seasoning with salt and pepper.
