Step-by-Step Instructions
  1. In a large skillet, heat 2 tablespoons of olive oil and 1 tablespoon of butter over medium heat. Add 2 finely sliced yellow onions and a pinch of salt. Cook slowly for 25-30 minutes, stirring occasionally until golden brown.
  2. To deepen the flavor, stir the onions every 5-7 minutes and if desired, sprinkle 1 teaspoon of sugar to speed up caramelization.
  3. In a small saucepan, heat 1/4 cup of olive oil over low heat, adding 3 minced garlic cloves. Sauté until fragrant, about 2 minutes.
  4. Carefully stir in 1 teaspoon of chili flakes and 1/2 teaspoon of smoked paprika and allow to infuse.
  5. In a large pot, boil salted water and add 12 ounces of pasta. Cook until al dente, about 8-10 minutes, reserving 1 cup of pasta water before draining.
  6. In the skillet with the onions, add the drained pasta and toss over medium heat. Gradually mix in reserved pasta water until reaching a silky consistency.
  7. Drizzle the chilli oil over pasta and adjust seasoning with salt and pepper.
  8. Plate and garnish with parsley and grated Parmesan cheese. Serve immediately.
