For the Chicken Marinade
  • 1 pound Boneless Chicken Thighs Can substitute with chicken breasts
  • 1 stalk Lemongrass Fresh preferred, or use paste if short on time
  • 4 cloves Garlic Can use garlic powder
  • 1 Shallot Can substitute for a small onion
  • 1.5 tablespoons Fish Sauce Substitute with soy sauce for vegetarian
  • 1.5 tablespoons Dark Soy Sauce Regular soy sauce works too
  • 2 tablespoons Sugar Brown sugar or honey can also be used
  • 2 tablespoons Water Helps dissolve marinade ingredients
For the Nuoc Cham Dipping Sauce
  • 1 clove Garlic Ground
  • 2 tablespoons Fresh Lime Juice White vinegar works as an alternative
  • 6 tablespoons Hot Water
  • 2 tablespoons + 1 teaspoon Sugar Adjust to your preference
  • 2 tablespoons Fish Sauce Reduce for a milder flavor
  • 1 Bird's Eye Chili Optional
  • 1 Grated Carrots Optional for presentation

Method
 

Step-by-Step Instructions
  1. Finely chop the garlic, shallot, and lemongrass, and mix them with fish sauce, dark soy sauce, sugar, and water in a bowl. Add the chicken and marinate for 30 minutes to 1 hour.
  2. Remove the chicken from the marinade, scraping off any large pieces of garlic and lemongrass. Set the chicken aside on a plate.
  3. Preheat the grill to medium heat and lightly oil the grates.
  4. Place the chicken skin side down on the grill, searing for 2-3 minutes, then flip and cook for another 5-8 minutes until done.
  5. Let the chicken rest for 5 minutes before slicing and serving with nuoc cham sauce.
