- Finely chop the garlic, shallot, and lemongrass, and mix them with fish sauce, dark soy sauce, sugar, and water in a bowl. Add the chicken and marinate for 30 minutes to 1 hour.
- Remove the chicken from the marinade, scraping off any large pieces of garlic and lemongrass. Set the chicken aside on a plate.
- Preheat the grill to medium heat and lightly oil the grates.
- Place the chicken skin side down on the grill, searing for 2-3 minutes, then flip and cook for another 5-8 minutes until done.
- Let the chicken rest for 5 minutes before slicing and serving with nuoc cham sauce.
