Ingredients

  • 1 pound chicken breasts substitute with tofu or chickpeas for vegetarian
  • ¼ cup olive oil high-quality recommended
  • 2 tablespoons lemon juice fresh lemon juice is best

For the Tacos
  • 8 small tortillas corn or flour preferred
  • 1 cup feta cheese substitute with goat cheese or omit
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • ½ cup red onion thinly sliced
  • ½ cup fresh parsley chopped
  • ½ cup kalamata olives pitted
For the Tzatziki Sauce
  • 1 cup Greek yogurt low-fat optional
  • ½ cup grated cucumber squeeze out excess moisture
  • 1 clove garlic adjust to taste

Method
 

Marinade Preparation
  1. In a large bowl, combine olive oil, lemon juice, minced garlic, oregano, paprika, cumin, salt and pepper. Whisk thoroughly until well blended.
Chicken Marination
  1. Slice chicken breasts into thin strips and add them to the marinade. Ensure each piece is coated, cover, and refrigerate for at least 30 minutes.
Cooking the Chicken
  1. Heat a skillet over medium-high heat. Add the marinated chicken in a single layer and cook for 6-8 minutes until fully cooked.
Tortilla Preparation
  1. Warm tortillas in a dry skillet or microwave for about 30 seconds until soft.
Assembling the Tacos
  1. Arrange warm tortillas on a platter and add cooked chicken strips to the center of each tortilla.
Adding Toppings
  1. Sprinkle added toppings like feta, cherry tomatoes, cucumber, onion, parsley, and olives over chicken.
Drizzling Tzatziki
