  • 8 oz Ramen Noodles fresh noodles yield the best texture
  • 1 lb Chicken Thighs can substitute with chicken breast
For the Sauce
  • 2 tbsp Chili Paste adjust according to heat preference
  • 4 cloves Garlic freshly minced
  • 1 cup Heavy Cream can lighten with half-and-half
For the Veggies
  • 2 cups Spinach can substitute with bok choy or kale
  • 4 green onions Green Onions reserve some for garnishing
Seasoning & Cooking
  • to taste Salt
  • to taste Pepper
  • 2 tbsp Olive Oil for sautéing

Method
 

Cooking Instructions
  1. Cook the ramen noodles in a large pot of salted boiling water according to package instructions, about 3-4 minutes for fresh noodles.
  2. In a large skillet, heat olive oil over medium-high heat, season chicken thighs with salt and pepper, and cook until golden brown, about 5-7 minutes. Remove and rest before slicing.
  3. In the same skillet, add garlic and chili paste; sauté for 1-2 minutes until the garlic is fragrant.
  4. Pour in the heavy cream and simmer for 2-3 minutes until it thickens slightly.
  5. Mix in the spinach and half of the green onions, cooking for an additional 2-3 minutes until the spinach is wilted.
  6. Add the cooked ramen noodles to the skillet and toss to coat with the creamy sauce, heating through for 2 minutes.
  7. Plate and garnish with remaining green onions and optional sesame seeds or chili flakes.
