Step-by-Step Instructions for Green Chile Chicken and Rice Casserole
  1. Preheat your oven to 350°F (175°C).
  2. In a large oven-safe skillet, heat olive oil over medium heat. Add chopped green onions, chili powder, ground cumin, garlic powder, and dried oregano. Sauté for about 2-3 minutes until fragrant.
  3. Add shredded chicken, brown rice, diced green chiles, fire-roasted tomatoes, frozen corn, and 1/4 cup of cheddar cheese to the skillet. Stir and heat through for another 3-4 minutes.
