- Preheat your oven to 400°F (200°C).
- Pat the chicken thighs dry with paper towels and season both sides with salt and pepper.
- In a medium bowl, combine apricot jam, Dijon mustard, olive oil, and freshly chopped thyme. Whisk until smooth.
- Place the chicken thighs in a baking dish and brush half of the glaze over the top.
- Bake for 30 minutes, until glaze is bubbling and chicken is cooked through.
- At the 15-minute mark, brush the remaining glaze over the chicken thighs.
- Check the internal temperature of the chicken, should reach 165°F (74°C).
- Let the chicken rest for about 5 minutes before serving.
