Heat the olive oil in a large skillet over medium heat. Add the sliced sausage and cook until browned, about 5-7 minutes.
Add the halved baby potatoes to the skillet. Stir to combine and cook for about 10 minutes, stirring occasionally, until the potatoes are tender and golden brown.
Add the diced onion and minced garlic to the skillet. Cook for an additional 3-4 minutes until the onion is translucent.
Stir in the paprika, oregano, salt, and pepper. Mix well to coat the ingredients.
Add the fresh spinach to the skillet and cook until wilted, about 2 minutes.
Remove from heat and garnish with chopped parsley if desired. Serve hot.
