  • 1 cup black beans drained and rinsed
  • 1 cup corn canned or frozen (thawed)
  • 1 avocado diced
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup red onion thinly sliced
  • 1/4 cup fresh cilantro chopped
  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Method
 

  1. In a large bowl, combine the romaine lettuce, cooked chicken, cherry tomatoes, black beans, corn, avocado, cheddar cheese, red onion, and cilantro.
  2. In a small bowl, whisk together the lime juice, olive oil, cumin, salt, and pepper until well combined.
  3. Drizzle the dressing over the salad and toss gently to combine all ingredients evenly.
  4. Serve immediately or chill in the refrigerator for 30 minutes to allow flavors to meld.
