Preparation Steps
- Preheat your oven to 375°F (190°C).
- Butterfly each boneless, skinless chicken breast and pound to a uniform thickness of about 1/2 inch.
- In a mixing bowl, combine feta cheese, spinach, sun-dried tomatoes, minced garlic, and optional red pepper flakes. Mix well.
- Season both sides of each chicken breast with salt, black pepper, garlic powder, dried oregano, and smoked paprika.
- Place filling on one end of each chicken breast and roll tightly. Secure with toothpicks or kitchen twine.
- In an oven-safe skillet, heat olive oil over medium-high heat and sear the rolls seam-side down for about 3-4 minutes on each side.
- Transfer the skillet to your preheated oven and bake for 25 minutes, or until the internal temperature reaches 165°F (75°C).
- Allow the chicken to rest for 5 minutes after baking, then slice and serve.
