Method
 

Instructions

  4. Spread the sweet potato rounds in a single layer on the baking sheet, ensuring they aren't overlapping.
  5. Roast the sweet potato rounds for 25–30 minutes, flipping halfway through until golden-brown and tender.
  6. Let the rounds cool slightly for about 5 minutes after roasting.
  7. Transfer the slightly cooled rounds to a platter and sprinkle crumbled feta cheese on top.
  8. Drizzle honey over the sweet potato rounds adorned with feta.
  9. Garnish with freshly chopped parsley and serve warm or at room temperature.
