- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Peel the carrots and cut them into uniform sticks, approximately 3 inches long and ½ inch thick. Trim the ends of the green beans.
- In a large mixing bowl, combine the carrot sticks and green beans. Drizzle with olive oil, then sprinkle garlic powder, coarse salt, and black pepper. Toss to coat evenly.
- Spread the seasoned vegetables in a single layer on the prepared baking sheet.
- Roast in the preheated oven for 20-25 minutes, stirring halfway through, until the carrots are tender and golden, and the green beans are bright and crisp.
- Remove from oven, transfer to a serving dish, and serve warm.
