Method
 

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Peel the carrots and cut them into uniform sticks, approximately 3 inches long and ½ inch thick. Trim the ends of the green beans.
  3. In a large mixing bowl, combine the carrot sticks and green beans. Drizzle with olive oil, then sprinkle garlic powder, coarse salt, and black pepper. Toss to coat evenly.
  4. Spread the seasoned vegetables in a single layer on the prepared baking sheet.
  5. Roast in the preheated oven for 20-25 minutes, stirring halfway through, until the carrots are tender and golden, and the green beans are bright and crisp.
  6. Remove from oven, transfer to a serving dish, and serve warm.
