Method
 

  1. In a medium bowl, combine the ricotta cheese, honey, vanilla extract, and salt. Mix until smooth and creamy.
  2. Fold in the chopped pistachios, reserving a few for topping.
  3. Using a small cookie scoop or spoon, portion the ricotta mixture into bite-sized balls and roll them in the graham cracker crumbs until fully coated.
  4. Place the bites on a serving platter and drizzle with additional honey if desired. Top with reserved pistachios.
  5. Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
  6. Garnish with fresh mint leaves if using, and serve chilled.
