Ingredients
  

  • 2 cups cooked and cooled rice jasmine or basmati
  • 1 cup finely chopped vegetables carrots, bell peppers, and green onions
  • 1 cup cooked protein shredded chicken, tofu, or shrimp
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1 package 8 ounces rice paper wrappers
  • Fresh herbs mint, cilantro, or basil for garnish
  • Soy sauce or dipping sauce for serving

Method
 

  1. In a large bowl, combine the cooked rice, chopped vegetables, cooked protein, soy sauce, sesame oil, garlic powder, and ginger powder. Mix well until all ingredients are evenly combined.
  2. Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it becomes pliable. Remove and place it on a clean, flat surface.
  3. Spoon about 2 tablespoons of the filling mixture onto the lower third of the rice paper wrapper. Add a few fresh herbs on top of the filling.
  4. Fold the sides of the wrapper over the filling, then roll it up tightly from the bottom to the top, similar to a burrito. Repeat with the remaining wrappers and filling.
  5. Heat a non-stick skillet over medium heat and add a little oil. Place the dumplings seam-side down in the skillet and cook for about 3-4 minutes on each side until golden brown and crispy.
  6. Serve the dumplings warm with soy sauce or your favorite dipping sauce.

Notes
