Preparing the Salad
- In a large mixing bowl, combine the Greek yogurt, shredded cucumber, lemon juice, fresh dill, garlic powder, and a pinch of salt and pepper. Stir until smooth and creamy.
- Introduce the shredded chicken, red onion, and kalamata olives to the tzatziki dressing. Gently fold together until well coated.
- Add the crumbled feta cheese and parsley to the salad. Mix gently to avoid breaking the feta too much.
- Taste and adjust the seasoning with more lemon juice, salt, or pepper as desired.
- Cover with plastic wrap and refrigerate for at least 30 minutes to enhance flavor.
- Serve chilled and garnish with additional feta or herbs if desired.
