  • 1 teaspoon garlic powder Substitute with fresh minced garlic if desired.

Salad Base
  • 2 cups shredded chicken Rotisserie chicken saves time.
  • 0.25 cup finely chopped red onion Can swap for green onions.
  • 0.5 cup pitted kalamata olives Chopped.

  • 0.25 cup chopped fresh parsley

Method
 

Preparing the Salad
  1. In a large mixing bowl, combine the Greek yogurt, shredded cucumber, lemon juice, fresh dill, garlic powder, and a pinch of salt and pepper. Stir until smooth and creamy.
  2. Introduce the shredded chicken, red onion, and kalamata olives to the tzatziki dressing. Gently fold together until well coated.
  3. Add the crumbled feta cheese and parsley to the salad. Mix gently to avoid breaking the feta too much.
  4. Taste and adjust the seasoning with more lemon juice, salt, or pepper as desired.
  5. Cover with plastic wrap and refrigerate for at least 30 minutes to enhance flavor.
  6. Serve chilled and garnish with additional feta or herbs if desired.
