Ingredients
  

  • 2 tablespoons unsalted butter
  • 10 cups mini marshmallows
  • 1 teaspoon vanilla extract
  • 8 cups Rice Krispies cereal
  • 1 cup freeze-dried strawberries crushed
  • 1 cup blue sprinkles
  • 1 cup white chocolate chips
  • 1 cup fresh blueberries
  • 1 cup fresh strawberries sliced
  • 1 cup whipped cream for topping

Method
 

  1. In a large saucepan, melt the butter over low heat. Add the mini marshmallows and stir until completely melted and smooth. Remove from heat and stir in the vanilla extract.
  2. In a large mixing bowl, combine the Rice Krispies cereal and crushed freeze-dried strawberries. Pour the melted marshmallow mixture over the cereal and strawberries, and stir until well combined.
  3. Lightly grease a bundt cake pan with cooking spray. Press the mixture firmly into the pan, ensuring it is evenly distributed. Allow it to cool at room temperature for about 30 minutes or until set.
  4. Once set, carefully invert the bundt cake onto a serving plate.
  5. Melt the white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth. Drizzle the melted chocolate over the bundt cake.
  6. Immediately sprinkle the blue sprinkles over the chocolate drizzle and top with fresh blueberries and sliced strawberries.
  7. Serve with a dollop of whipped cream on each slice.
