Ingredients
  

  • 2 cups fresh raspberries
  • 1/2 cup fresh mint leaves plus extra for garnish
  • 1/4 cup granulated sugar
  • 1/2 cup fresh lime juice about 4 limes
  • 1 cup white rum
  • 2 cups club soda
  • Ice cubes

Method
 

  1. In a large pitcher, muddle the raspberries and mint leaves together with the sugar until the raspberries are crushed and the mixture is fragrant.
  2. Add the fresh lime juice and white rum to the pitcher, stirring well to combine all the ingredients.
  3. Fill glasses with ice cubes and pour the raspberry mixture over the ice, filling each glass about two-thirds full.
  4. Top each glass with club soda, stirring gently to combine.
  5. Garnish with additional mint leaves and a few whole raspberries, if desired. Serve immediately.
