Add the chicken thighs to the bowl and coat them thoroughly with the seasoning mixture. Make sure to rub the mixture under the skin for extra flavor.
Place the seasoned chicken thighs on a baking sheet lined with parchment paper, skin side up.
Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the skin is crispy. The internal temperature should reach 165°F.
Remove from the oven and let the chicken rest for 5 minutes. Garnish with fresh parsley before serving.
