Ingredients
  

  • 2 large chicken breasts about 1 pound total
  • 1 cup crushed pretzels
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon butter for sauce
  • 1 tablespoon all-purpose flour for sauce
  • 1 cup milk
  • 1/2 cup shredded sharp cheddar cheese
  • 2 tablespoons Dijon mustard
  • Salt and pepper to taste for sauce

Method
 

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  2. In a shallow dish, combine crushed pretzels, garlic powder, paprika, salt, and pepper. In another shallow dish, place the flour. In a third dish, beat the eggs.
  3. Pat the chicken breasts dry with paper towels. Dredge each chicken breast in flour, shaking off excess. Dip into the beaten eggs, then coat thoroughly with the pretzel mixture.
  4. Place the coated chicken breasts on the prepared baking sheet. Drizzle olive oil over the top of the chicken. Bake for 25-30 minutes, or until the chicken is cooked through and the coating is golden brown.
  5. While the chicken is baking, prepare the mustard-cheddar sauce. In a saucepan over medium heat, melt the butter. Whisk in the flour and cook for 1 minute. Gradually add the milk, whisking constantly until the mixture thickens, about 3-5 minutes.
  6. Remove the saucepan from heat and stir in the cheddar cheese and Dijon mustard until smooth. Season with salt and pepper to taste.
  7. Once the chicken is done, let it rest for a few minutes before slicing. Serve with the mustard-cheddar sauce drizzled on top.
