  • 1 sheet Puff Pastry Keep it chilled until use.
  • 1 large Egg For wash; mix with water.
For Garnish
  • 1/2 cup Fresh Cranberries or Pomegranate Seeds Optional; adds color and flavor.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine chopped pistachios, honey, rosemary, sea salt, and black pepper.
  3. Roll out the chilled puff pastry on a floured surface and cut into 3x3 inch squares.
  4. Place a small piece of Brie in the center of each pastry square and spoon the pistachio mixture on top.
  5. Fold the corners of the pastry over the Brie and seal the edges tightly.
  6. Beat the egg with water and brush the mixture over each pastry pocket.
  7. Bake for 15-20 minutes until puffed and golden brown.
  8. Cool for a few minutes and garnish with cranberries or pomegranate seeds before serving.
