Method
 

  1. In a cocktail shaker, muddle the fresh mint leaves with the simple syrup and lime juice to release the mint's essential oils.
  2. Add the white rum and coconut cream to the shaker. Fill the shaker with ice and shake vigorously for about 15 seconds.
  3. Strain the mixture into a glass filled with ice.
  4. Top off the drink with club soda to your desired fizziness.
  5. Garnish with lime wedges and a sprig of mint. Serve immediately.
