Step‑by‑Step Instructions for Philly Cheese Steak Soup
  1. In a large pot, heat olive oil over medium heat until shimmering. Add sliced beef sirloin and cook for 5-7 minutes, stirring occasionally, until browned. Transfer to a plate, leaving drippings in the pot.
  2. In the same pot, add chopped onion, diced green bell pepper, and minced garlic. Sauté for 5 minutes until softened.
  3. Return browned beef to the pot and stir in beef broth. Bring to a gentle simmer, then reduce heat to medium-low and simmer for 15 minutes.
  4. Stir in heavy cream and provolone cheese, stirring until the cheese melts completely. Remove from heat.
  5. Season with salt and pepper to taste, and serve immediately.
