Method
- In a large bowl, combine the cooked chicken and basil pesto. Mix until the chicken is well coated.
- Add the cherry tomatoes, shredded mozzarella cheese, and toasted pine nuts to the chicken mixture. Stir gently to combine. Season with salt and pepper to taste.
- Take a lettuce leaf and spoon about 1/4 cup of the chicken mixture into the center.
- Fold the sides of the lettuce over the filling and roll it up to create a wrap.
- Repeat with the remaining lettuce leaves and chicken mixture. Serve immediately.
