Ingredients

  • 4 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 8 slices of thick bread like brioche or challah
  • 1/2 cup chopped pecans
  • 1/4 cup brown sugar
  • 1/4 cup maple syrup
  • Butter or oil for cooking

Method

  1. In a large mixing bowl, whisk together the eggs, milk, vanilla extract, ground cinnamon, and salt until well combined.
  2. Preheat a large skillet or griddle over medium heat and add a little butter or oil to coat the surface.
  3. Dip each slice of bread into the egg mixture, allowing it to soak for a few seconds on each side.
  4. Place the soaked bread slices onto the skillet and cook for about 3-4 minutes on each side, or until golden brown.
  5. While the French toast is cooking, combine the chopped pecans, brown sugar, and maple syrup in a small bowl.
  6. Once the French toast is cooked, remove it from the skillet and top each slice with the pecan mixture.
  7. Serve warm with additional maple syrup if desired.

  • For a richer flavor, try adding a tablespoon of bourbon to the egg mixture.
  • You can also substitute walnuts for pecans if you prefer a different nut.
  • For a healthier twist, use whole grain bread and reduce the amount of brown sugar.
