Ingredients

  • 1 cup finely chopped pecans
  • 1 cup crushed vanilla wafers
  • 1/2 cup powdered sugar
  • 1/4 cup light corn syrup
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips for coating

Method

  1. In a large mixing bowl, combine the finely chopped pecans, crushed vanilla wafers, powdered sugar, light corn syrup, cocoa powder, vanilla extract, and salt. Mix until well combined and a dough forms.
  2. Refrigerate the mixture for about 30 minutes to allow it to firm up, making it easier to shape.
  3. Once chilled, use a tablespoon to scoop out portions of the mixture and roll them into balls, about 1 inch in diameter. Place the balls on a baking sheet lined with parchment paper.
  4. In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring in between until smooth.
  5. Dip each pecan pie ball into the melted chocolate, ensuring they are fully coated. Return them to the parchment-lined baking sheet.
  6. Once all the balls are coated, refrigerate them for an additional 30 minutes to set the chocolate.
  7. Serve chilled or at room temperature. Enjoy your delicious pecan pie balls!

  • For added flavor, consider mixing in a tablespoon of bourbon or rum to the dough before rolling into balls.
  • You can substitute crushed graham crackers for the vanilla wafers for a different flavor profile.
