Ingredients
  

For the Base and Crumble
  • 2 cups all-purpose flour can use gluten-free flour blend
  • 1 cup granulated sugar can substitute with coconut sugar
  • 1/2 cup brown sugar
  • 1 tbsp baking powder ensure it’s fresh
  • 1/2 tsp salt omit if using salted butter
  • 1/2 cup butter (melted) can substitute with margarine
  • 1 large egg for a vegan option, use a flax egg
  • 1 tsp vanilla extract can replace with almond extract
For the Peach Filling
  • 4 cups peaches (fresh/canned/frozen) use ripe peaches for best flavor
  • 2 tbsp cornstarch can be replaced with arrowroot powder
  • 1 tbsp lemon juice substitute with lime juice if needed
  • 1/2 tsp cinnamon omit if not preferred

Method
 

Preparation
  1. Preheat your oven to 180°C (350°F) and line a 9x9-inch baking pan with parchment paper.
  2. In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, and salt until well incorporated.
  3. Stir in the melted butter, egg, and vanilla to the dry ingredients until the dough is crumbly but somewhat cohesive.
  4. Press about two-thirds of the dough mixture firmly into the bottom of the lined baking pan.
  5. In a separate bowl, combine diced peaches, sugar, cornstarch, lemon juice, and cinnamon. Stir until the peaches are evenly coated.
  6. Pour the peach filling evenly over the crust in the baking pan.
  7. Crumble the remaining dough over the peach filling, leaving small gaps.
  8. Bake for 35–40 minutes until the topping is golden brown and the filling starts to bubble.
  9. Allow the bars to cool completely in the pan before lifting and slicing into squares.
