Preparation
- Preheat your oven to 180°C (350°F) and line a 9x9-inch baking pan with parchment paper.
- In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, and salt until well incorporated.
- Stir in the melted butter, egg, and vanilla to the dry ingredients until the dough is crumbly but somewhat cohesive.
- Press about two-thirds of the dough mixture firmly into the bottom of the lined baking pan.
- In a separate bowl, combine diced peaches, sugar, cornstarch, lemon juice, and cinnamon. Stir until the peaches are evenly coated.
- Pour the peach filling evenly over the crust in the baking pan.
- Crumble the remaining dough over the peach filling, leaving small gaps.
- Bake for 35–40 minutes until the topping is golden brown and the filling starts to bubble.
- Allow the bars to cool completely in the pan before lifting and slicing into squares.
