  • 3 cups fresh peaches peeled and sliced (or 2 cans of sliced peaches, drained)
  • 1 cup granulated sugar divided
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup whole milk
  • ½ cup unsalted butter melted
  • 1 teaspoon sugar for topping

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the sliced peaches, ½ cup of sugar, cinnamon, vanilla extract, and lemon juice. Stir until the peaches are well coated.
  3. Pour the peach mixture into a greased 9x13-inch baking dish.
  4. In another bowl, whisk together the flour, baking powder, salt, and the remaining ½ cup of sugar.
  5. Gradually stir in the milk until the batter is smooth.
  6. Pour the batter evenly over the peach mixture in the baking dish. Do not stir; the batter will rise during baking.
  7. Drizzle the melted butter over the top of the batter.
  8. Sprinkle 1 teaspoon of sugar over the buttered batter for added sweetness and crunch.
  9. Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  10. Allow to cool for about 10 minutes before serving.
