- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large mixing bowl, whisk together the all-purpose flour, sugar, baking powder, and salt.
- In another bowl, whisk together the melted unsalted butter, milk, vanilla extract, and cinnamon.
- Pour the wet ingredients into the bowl with the dry ingredients and mix just until combined, folding in the diced peaches.
- In a small bowl, mix together the brown sugar, oats, and a sprinkle of cinnamon to create the streusel topping.
- Fill each muffin cup with the batter about three-quarters full and sprinkle the streusel mixture generously on top.
- Bake for 20-25 minutes until a toothpick inserted in the center comes out clean.
- Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
