Baking Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Combine the flour, sugar, baking powder, and salt in a large bowl, whisking until uniform.
- In a separate bowl, whisk together melted butter, milk, vanilla, and cinnamon until smooth.
- Pour wet ingredients into dry ingredients, stirring gently until just combined. Fold in diced peaches.
- Prepare the streusel by mixing brown sugar, oats, and cinnamon until crumbly.
- Scoop the muffin batter into prepared muffin cups, filling them about 2/3 full. Sprinkle with streusel.
- Bake for 20-25 minutes until golden brown and a toothpick comes out clean.
- Cool in the pan for 5 minutes, then transfer muffins to a wire rack.
