Dressing
  • 1/4 cup Olive Oil or avocado oil as substitute
  • 2 tablespoons Balsamic Vinegar use high-quality
  • 1 clove Garlic crushed
  • 1 tablespoon Pure Maple Syrup or honey as alternative
  • 1 teaspoon Dried Thyme can substitute with fresh thyme
  • to taste Salt & Pepper
Salad
  • 4 cups Lettuce (mixed spinach and butter lettuce)
  • 1 cup Fresh Blueberries can swap with raspberries
  • 1 cup Fresh Strawberries quartered
  • 1 cup Fresh Mozzarella or bocconcini
  • 1/4 cup Pine Nuts or almonds/pecans
  • 1/4 cup Fresh Basil or any fresh herb

Method
 

Preparation
  1. Step 1: Toast Pine Nuts - Heat a skillet over medium heat, add pine nuts and toast for 2-3 minutes until golden brown. Remove and cool.
  2. Step 2: Prepare Dressing - Combine olive oil, balsamic vinegar, crushed garlic, maple syrup, thyme, salt and pepper in a mason jar and shake for 30 seconds.
  3. Step 3: Assemble Salad - Layer mixed greens in a large bowl, add blueberries, strawberries, mozzarella, toasted pine nuts, and fresh basil.
  4. Step 4: Serve - Drizzle dressing over salad just before serving without mixing the ingredients to maintain presentation.
