  • 300 g Pasta (penne or rigatoni) Opt for gluten-free pasta if desired.
For the Sauce
  • 800 g Canned whole tomatoes or fresh tomatoes Pureed tomatoes can be used for a smoother sauce.
  • 1 medium Onion Finely chopped; yellow or white varieties work best.
  • 2 cloves Garlic Minced; adjust according to taste.
  • 3 tablespoons Olive oil Essential for sautéing.
For the Cheesy Layer
  • 250 g Mozzarella cheese Fresh mozzarella yields the best results.
  • 50 g Grated Parmesan cheese Consider substituting with Pecorino Romano.
For Garnish
  • to taste Fresh basil leaves Dried basil can substitute in emergencies.
  • to taste Salt
  • to taste Pepper

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a rolling boil. Add pasta and cook for 8–10 minutes until al dente. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Add chopped onion and sauté for about 5 minutes until translucent.
  3. Add minced garlic and sauté for an additional minute until aromatic.
  4. Pour in crushed tomatoes, season with salt and pepper, and simmer for 15-20 minutes.
  5. Combine the drained pasta with the sauce, tossing until well coated.
  6. Dice fresh mozzarella and stir into the pasta and sauce mixture until melted.
  7. Garnish with fresh basil and adjust seasoning to taste.
  8. Optionally, transfer to a baking dish, sprinkle Parmesan cheese, and bake at 180°C (350°F) for 15-20 minutes.
  9. Allow to rest for 5 minutes before serving.
  10. Serve with extra fresh basil and a drizzle of olive oil.
