Method
 

Cooking Steps
  1. Bring a large pot of salted water to a boil. Add penne pasta and cook until al dente, about 10-12 minutes. Drain and set aside.
  2. Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Season chicken with Cajun seasoning and cook for 4-5 minutes until golden brown. Remove and keep warm.
  3. In the same skillet, add shrimp and sauté for 2-3 minutes or until pink and opaque. Remove and set aside with chicken.
  4. Add sliced andouille sausage to the skillet and sauté for 2 minutes. Add bell peppers, red onion, and garlic. Cook for 4 minutes until vegetables are tender.
  5. Pour in heavy cream and simmer for 2-3 minutes until thickened. Gradually add Parmesan cheese, stirring until melted. Adjust seasoning with salt and pepper.
  6. Combine chicken, shrimp, and drained penne with the sauce, tossing gently to coat. Heat through for 1-2 minutes.
  7. Garnish with chopped parsley and serve hot, either plated or family-style.
