Rub the spice mixture evenly over the chicken thighs, making sure to get some under the skin for extra flavor.
Place the chicken thighs skin-side up on a baking sheet lined with parchment paper or in a cast iron skillet.
Drizzle the lemon juice over the chicken.
Bake in the preheated oven for 35-40 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is crispy.
Remove from the oven and let rest for 5 minutes before serving. Garnish with fresh parsley.
