  • 4 bone-in skin-on chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh parsley for garnish

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken thighs dry with paper towels to ensure crispy skin.
  3. In a small bowl, mix together the olive oil, garlic powder, onion powder, smoked paprika, thyme, salt, and black pepper.
  4. Rub the spice mixture evenly over the chicken thighs, making sure to get some under the skin for extra flavor.
  5. Place the chicken thighs skin-side up on a baking sheet lined with parchment paper or in a cast iron skillet.
  6. Drizzle the lemon juice over the chicken.
  7. Bake in the preheated oven for 35-40 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is crispy.
  8. Remove from the oven and let rest for 5 minutes before serving. Garnish with fresh parsley.
