- Heat the skillet by adding a tablespoon of olive oil in a large skillet over medium heat.
- Season chicken with garlic powder, onion powder, smoked paprika, salt, and pepper. Sear chicken for about 5 minutes on each side until golden brown.
- Whisk together BBQ sauce and honey, pour it over the chicken, and let it simmer for a minute.
- Add rinsed rice and chicken broth. Stir gently, making sure rice is submerged in liquid.
- Bring to a gentle simmer, cover, and reduce heat to low. Cook for about 20 minutes until liquid is absorbed.
- Add mixed vegetables on top of the rice, cover, and let them steam for an additional 5 minutes.
- Remove from heat, let sit for 5 minutes, then fluff rice with a fork and serve.
