Cooking Instructions
  1. Heat the skillet by adding a tablespoon of olive oil in a large skillet over medium heat.
  2. Season chicken with garlic powder, onion powder, smoked paprika, salt, and pepper. Sear chicken for about 5 minutes on each side until golden brown.
  3. Whisk together BBQ sauce and honey, pour it over the chicken, and let it simmer for a minute.
  4. Add rinsed rice and chicken broth. Stir gently, making sure rice is submerged in liquid.
  5. Bring to a gentle simmer, cover, and reduce heat to low. Cook for about 20 minutes until liquid is absorbed.
  6. Add mixed vegetables on top of the rice, cover, and let them steam for an additional 5 minutes.
  7. Remove from heat, let sit for 5 minutes, then fluff rice with a fork and serve.
