Preheat your oven to 350°F. Line a baking sheet with parchment paper.
In a medium bowl, combine the rolled oats, whole wheat flour, baking soda, cinnamon, and salt. Mix well and set aside.
In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. If desired, fold in the raisins or chocolate chips and chopped nuts.
Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each cookie slightly with the back of a spoon.
Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
