- Carefully cut pockets into each chicken breast to create space for the filling.
- In a medium mixing bowl, combine shredded mozzarella, cream cheese, ranch seasoning, garlic powder, and onion powder until smooth.
- Stuff the chicken pockets with the cheese filling and season the outside with salt and black pepper.
- Sear the stuffed chicken breasts in olive oil on a skillet, 2-3 minutes per side until golden brown.
- Transfer the skillet to the oven and bake for 20-25 minutes until the internal temperature reaches 165°F (74°C).
- Let rest for a few minutes, remove toothpicks, garnish with parsley, and serve hot.
