Ingredients
  

For the Pasta
  • 12 ounces Spaghetti Can swap for bucatini or linguine if desired.
For the Sauce
  • 2 tablespoons Olive Oil Opt for extra virgin for the best taste.
  • 4 cloves Garlic Minced fresh garlic is recommended.
  • 1 teaspoon Chilli Flakes Omit if you prefer a milder taste.
For the Main Flavor
  • 1 pound Mushrooms Portobello or cremini is best.
  • 3 tablespoons Fresh Parsley Dried parsley can work in a pinch.
For the Finishing Touch
  • cup Parmesan Cheese Optional; can replace with nutritional yeast.
  • Salt & Pepper To taste.

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
  2. Rinse and dry the mushrooms, slicing them into even pieces.
  3. Heat olive oil in a skillet over medium heat. Add minced garlic and chili flakes, and cook for about 1 minute.
  4. Add mushrooms to the skillet, season with salt and pepper, and sauté for about 7 minutes.
  5. Transfer drained spaghetti to the skillet, adding the reserved pasta water and fresh parsley; toss to combine.
  6. Serve immediately, garnishing with additional parsley and Parmesan if desired.
