- Preheat your oven to 350°F (175°C). Grease your loaf pan or line it with parchment paper.
- Mash 2-3 ripe bananas with a fork until mostly smooth, leaving a few lumps. Mix in 1/3 cup melted butter until combined.
- Add 1 teaspoon of baking soda and a pinch of salt, stirring well. Gradually fold in 3/4 cup of sugar until dissolved.
- Crack 1 egg into the mixture and pour in 1 teaspoon of vanilla extract. Mix until well combined.
- Gently fold in 1.5 cups of flour until just combined; a few lumps are okay.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50 to 60 minutes. Check doneness with a toothpick; it should come out clean or with moist crumbs.
- Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
