  3. In a large bowl, combine vegetable oil, granulated sugar, and light brown sugar, and beat until smooth and creamy.
  4. Add eggs one at a time, mixing after each addition, then pour in vanilla extract and blend well.
  5. Fold in shredded zucchini and diced apple gently into the wet mixture.
  6. Gradually add the dry ingredients to the wet mixture, folding until just combined.
  7. If using, fold in chopped walnuts or pecans.
